Located in the sleepy village of Assignan in the rural Languedoc region, this charming country house is just one of several rescued from abandonment and ruin and reborn as a chic new residence. Designed and conceived by a Flemish couple who discovered much of the village deserted, they set about transforming and rehabilitating several buildings to create a unique hotel and oeno-tourism concept.
Located within a gated entrance, the house is a private carefree oasis with amazing views across the vineyards and countryside. Redesigned in keeping with the cultural heart and lifestyle of the region, it retains its rustic charm but with a renewed modern spirit. The bright whitewashed interiors have been updated with subtle modern amenities, a little edgy contemporary style and cool vintage touches. There’s a fully-equipped kitchen and dining area and two large double bedrooms that sleep four guests. The grounds feature outdoor dining areas, beautiful gardens and terraces, and a gorgeous pool nestled into the trees with plenty of lounge areas.
Tucked away, just outside of the center of town, the house inhabits an emerging village of residences, shops, sustainable eateries and eco-wine cellars. La Table offers an audacious and refined cuisine with a Michelin Star while La Petite Table prepares grilled fish, meat and vegetables from the garden on the main square and pours the best of the proprietary wines from the vineyards and local vintners. The Nomad Kitchen is a breezy alfresco experience hosted in the vineyards with the best of the daily harvest and fare from locally-sourced farms.
Guests can partake in the many fun activities that the hosts arrange including, scooter and small motorbike tours with wine tasting and picnics, horse-drawn carriage tours and truffle and game hunting.

Located in the Languedoc region of southern France that stretches from Provence to the Pyrenees Mountains, this famous wine-producing region borders Spain to the south. The coastal areas are just over an hour drive and feature less touristy beaches than the neighboring Cote d’Azur as well as the Parc Naturel de la Narbonnaise, a large swath of protected lagoons, islands and wetlands with stretches of white sandy beaches. Haut Languedoc lies inland and features the wild hills, forests and the Parc National des Cévennes. Nearby Carcassone can be reached in a hour.
